A blue cheese for everyone, even those who think they don't like blue cheese.  Bucks Blue is a raw-milk, organic blue cheese handmade in Winslow, North Buckinghamshire. Crafted from local milk and ripened with care, it delivers a surprisingly gentle, creamy character that wins over sceptics and delights connoisseurs alike.

 

Look A rustic, orange-brown natural rind gives way to a pale ivory paste, laced with delicate veins of blue-green mould. The texture is semi-soft and yielding — firm enough to slice, but with a slightly crumbly heart.

 

Aroma Fresh and milky with earthy, farmhouse undertones from the natural rind. Inviting rather than overpowering.

 

Flavour The first thing you'll notice is the creaminess, rich, buttery, and gently sweet. Then come layers of toasted biscuit, caramel and a bright, crisp green-apple fruitiness. The blue mould adds a savoury, peppery warmth rather than a sharp bite, finishing with a deep, almost beefy umami that lingers nicely.

 

Texture Smooth and buttery on the tongue. As Bucks Blue matures, the paste softens and becomes pleasingly spreadable.

 

What makes it special Because we use raw milk, the flavour has a depth and complexity you won't find in pasteurised alternatives. And because this is a true farmhouse cheese, every batch reflects the season - the lush summer grass, the hay-fed winter months - so no two wheels are quite the same.

 

Pairs well with: a drizzle of local honey, ripe pears, walnuts, or a glass of something sweet; try it with a plum liqueur.
