This is our most mature hard cheese, similar in style to those made in the high European Alps, but with a very complex flavour profile.  A rich, slightly nutty taste, opening with full-bodied, fruity tones, and then slowly transitioning towards earthy and nutty nuances.  A popular choice in dishes like fondue and croque monsieur, delicious grated over French onion soup, or simply savored on its own.
